As I get older, I just want to strip away the frills and just get down to what makes food deeply delicious.
Food created for nourishment.
My years of experience have shaped my attitude towards food and helped me to understand what’s really important - nourishment. We have the choice to poison our bodies, or strip away the frills and feed them what they need.
Growing up I was
fascinated by food...
I was captivated by cooking shows like Walk with Yan and was fuelled with a desire to recreate those recipes being made in front of me. And Saturday lunches at my grandparents' house with my huge family, were always centred around the kitchen table.
But I felt the pressure to get a “real job”.
As an adult I dabbled in advertising and sales. But my mind was always in the kitchen. When a family friend suggested culinary school, everything changed. I worked my way up, training & learning as much as possible, before opening my own place in Toronto - Otto’s Berlin Doner, where I worked for 2 years before being hired by restaurants in Hong Kong and later Dubai.
At the end of the day, I just love eating.
Today we are swamped with sensationalist content, where everyone is a guru educating us on the best new diet or health fad. There’s a lot of bullshit, but I’m here to keep things simple. With tradition, nutrition and a focus on community in food.
It’s more than just a meal.
When every dish is crafted to nourish your body and delight your soul, it’s much more than just a meal.
